How can I recover data from lost/deleted partitions?, Many different, mainly: NTFS, FAT32 & HFS+

Looking for a program to recover my data.
My old partition schema entailed the following file-systems;
NTFS
Ext3
FAT32
HFS+
Although I didn't have anything of value on the ext3 partition, so don't worry about finding a software that can recover ext3. Most important is NTFS. Seconded by HFS+.
I've seen a whole spectrum of software's, and tried a few of them.

But neither seem to be able to do exactly what I want. Biggest issue is that neither can write to NTFS.
Also tried TestDisk... but can't seem to work out how to use it.
Please help me recover my deleted partitions.

PS: If you were wondering how they got deleted, blame the new ubuntu installation.

If you selected to "Use
If you selected to "Use Entire Disk" during the Ubuntu installation, then your partition table was erased and new partitions were created. There is a warning shown to you that this will erase all the data on the disk when you select that option.
I reckon that your NTFS filesystem is unrecoverable. You should still be able to recover many of the files that were there using file-carving software (photorec and foremost). Merely formatting a partition does not erase a lot of data.
You may be able to reclaim the other partitions on your disk, but they most likely will be problematic. Again, your best bet is to use file carving software.
What testdisk does is look at the beginning of cylinder boundaries for filesystem signatures, then guesses where the partition used to be. It can then add that partition back to the partition table for you. The problem with that is when your drive was repartitioned and formatted to ext3, the filesystem data (the index, if you will) may be broken. You can try to go aftewr your data using the remaining filesystem data, but I would first try file-carving since it should be easy to use and should provide you with excellent results.
You need to have a medium to which to save this data. You cannot file-carve in-situ. To do that, you would need a working filesystem on each partition and I doubt you have that.

I would actually recommend you figure out how to use Testdisk - its not that hard to use really, and there's a fair chance that it might recover some/all of the partitions for you, providing its only really the partition table that's been clobbered and not the partitions themselves. I would give you specific instructions for Testdisk but haven't used it in a while and don't have a VM handy atm to work out the exact instructions, so apologies for not being more specific. If you still can't figure it out then let me know I'll try to burn a disk to refresh my memory.
